Green Dirt Farm (our favorite little sheep dairy in Weston, MO) makes this delicious buttery, lemony, mushroomy cheese with pasteurized sheep's milk before dusting it in vegetable ash and letting it develop a delicious and delicate bloomy rind. As it ages, it gets pudgier and more earthy, developing a smell on the rind of wet dirt. Grab a rose or wheat beer, a wheel of Dirt Lover, and a pack of dried apricots and you've got supplies to kill a couple hours on the deck.
