To say that Ramon Peña is one of the finest canneries on the planet would be no exaggeration. They source the best of the catch out of the Rias Baixas, they process them with a very light touch, and a room full of Spanish grandmothers who are clearly very good at what they do hand-pack each can to look downright gorgeous when you open it. I don't understand how you could send a can of sardines across the ocean without a single fish shifting out of line, but they pull it off. These sardines are the ultimate treat for any tinned fish nerd.
